Everyone knows cinnamon as a sweet spice widely used in desserts and recipes, but not many are familiar with the tree it comes from. It is an evergreen that can reach a height of about 15 meters, with a compact crown made of long and narrow leaves, and when it blooms, it is covered in many small white flowers. Unlike other culinary spices, cinnamon is not obtained from the seed or fruit of this tree, but from its bark which, once stripped of the outer layer, releases its aromatic essence.libera la propria essenza aromatica.
What surprises about the aroma of cinnamon is its unmistakable character, which manages to combine sweetness with a slight hint of spiciness. This is why it is widely used in sweet pairings (especially in the West) as well as in savory ones (especially in the East). Its character is therefore distinctive, original, and very intense. And intensity is precisely the meaning we have chosen to attribute to it.
